Cranberry-Chocolate Chip Pancakes

One of My Favorite Recipes From My Childhood!

This is an old family recipe that I just ran across when looking through some old papers. Being without power for several days let us actually do things that we’ve been putting off! Such as going through boxes that have been piling up in the basement. :)

Ingredients:

  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder (optional if you have it)
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 egg (if available, otherwise just increase milk slightly)
  • 1/4 cup chocolate chips (I use Dark Chocolate chips)
  • 1/4 cup dried cranberries (or fresh if you have)
  • Butter or oil for cooking

Instructions:

  1. In a large bowl, mix flour, sugar, baking powder (if using), and salt.
  2. Gradually stir in milk and egg (if using) until the batter is smooth.
  3. Fold in the chocolate chips and cranberries.
  4. Heat a lightly greased pan over medium heat. Pour small amounts of batter to form pancakes.
